Okay, so here is a project I’ve been watching closely.  Collabora Online is like an open source, self-hosted Google Docs.  And they’ve just released their first production version.

Although the lay person might wonder why someone would need to have their own Google Docs, I can think of at least a couple of applications wherein a tool like this would go a long way:  a private shared content library, or a collaborative project of highly sensitive information.  You certainly wouldn’t want to host your sensitive software documentation on Google Docs if you’re software will ever compete with Google.  Let’s just say that would be bad long term strategy.
